Any kind of animal use means animal suffering. The use of animals does not allow the animals freedom and self-determination over their lives, their bodies, their social relationships and over their offspring. They are trapped in a system in which they are a commodity. Most animals used in one way or another by humans also suffer an early, violent death.

Beyond Meat.

Last week, Lauren Wildbolz had the wonderful opportunity to host catering for 70 guests during the Swiss launch of Honest Iced Tea. Her highlight was getting to know the visionary Seth Goldman. He gave her the fantastic news that his company Beyond Meat* was already supplying the first restaurants in Switzerland with Beyond Meat burger patties in July. will supply.

The company Beyond Meat has succeeded in cracking the molecular composition of meat. Beyond Meat offers chicken, beef and, most recently, a burger made from pea protein, beetroot juice, chia seeds and other plant-based ingredients.

Vegan start-up companies are springing up, financed by Bill Gates, Google founder Sergej Brin and financial investor Peter Thiel. These are companies that want to revolutionize the meat market. One of the flagship investments: Beyond Meat. The founders want the meat to be followed by something that looks and tastes like meat – but comes from vegan production rather than from animals.

The Californian start-up wants to replace animal protein with plant-based protein for the masses. For human health, positive impact on climate change, natural resources and respect for animal welfare.

Their approach is based on the 25/20 principle: The Beyond Meat company aims to reduce global meat consumption by 25 percent by 2020.

Milk myth on Milk Day

We are not dependent on milk

The vast majority of people worldwide do not tolerate cow’s milk in adulthood and live without it without any problems. Numerous vegans also show that dairy-free is perfectly possible. The Academy of Nutrition and Dietetics – the largest organization of nutrition experts worldwide – clearly states that a diet without dairy products and other animal foods is suitable for all stages of life and offers many health benefits.

Cow’s milk is for cow’s kids

Cows have to be impregnated and calve in order to give milk. Immediately after birth, the calf is taken away from them and placed in a so-called calf igloo. After a few months, the calf is killed for the production of veal or beef. And the suckler cow is also slaughtered as soon as her milk yield decreases. On average, a dairy cow is sent to the slaughterhouse after just 5 years, even though she could live for over 20 years.

Strong without milk

A plant-based diet offers many very good sources of protein – even for top athletes. One of Germany’s strongest men, Patrik Baboumian, lives a vegan lifestyle, consuming neither meat nor dairy products. Just like many other top athletes, he is an example of how things can be at least as good without milk.

Our bones don’t need milk

Time and again, advertising tries to make us believe that milk gives us strong bones. However, numerous scientific studies show that milk has no significant influence on bone quality. People who drink milk do not have stronger bones. Other factors are primarily important for strong bones: sufficient exercise (sport), enough vitamin D and a sufficient calcium intake. The high calcium content of milk is repeatedly referred to. However, the calcium requirement can easily be met from plant sources.

Milk does not protect against vitamin D deficiency

We get most of our vitamin D from the sun through our skin, around 95%. To consume the remaining 5% of the recommended daily intake, you would have to drink 25 liters of cow’s milk a day – that corresponds to between 10,500 and 16,000 kcal (depending on the fat content of the milk)! Did you also know that more than 60% of the Swiss population has too little vitamin D in winter, regardless of their diet? Therefore: In summer the sun is enough – in winter everyone should supplement.

Overview of plant-based milk alternatives

In terms of taste, plant-based milk alternatives offer a lot of variety. It is generally worth trying out different brands, as we all know that tastes differ. If you want to use Plant Dricks 1:1 as before, you should make sure you choose a calcium-enriched variant. Enriched soy milk is nutritionally closest to cow’s milk.

At Easter, masses of eggs are once again dyed, “inked” and eaten. Milk chocolate bunnies fill department stores to the ceiling. And the baby lamb as “Gitzi” on the menu in the restaurant is unfortunately also a big seller every Easter. Shoe Cabinet

Of course, I am always asked at my public appearances whether my shoes are free of animal ingredients, i.e. not made of leather. Yes, I’ve not only been eating vegan for 10 years, but I also live vegan and that includes wearing shoes made of artificial leather, cork and Piñatex – a leather-like material made from the long fibers of pineapple leaves.

However, I didn’t throw away my old leather shoes back then, but wore them to the bitter end before replacing them with sustainably produced, vegan shoes. We have already reported on these procedures several times here on the blog:

I now have a nice collection of vegan shoes that cover all four seasons here in Switzerland. Everything from Brave Gentleman to Stella McCartney and No Animal Brand can be found in my shoe box. I personally always find inspiring names like Good guys don’t wear leather or Cri de Coeur (cry of the heart) or Beyond Skin super fitting and motivate me to continue on this path because these labels always produce innovative and cool shoes. I can tell you from experience that vegan shoes last much longer because they are always waterproof and stay in good shape even in a hard winter with snow and salt on the roads.

Recipe “Cookie cutters”

 

Ingredients

½ Vanilla pod

1 untreated lemon (organic)

250g wholemeal spelt flour

1 tsp cream of tartar baking powder

100g sunflower oil

100g rice syrup

Flour for the work surface

3 tbsp rapeseed margarine (or one without palm fat)

1/2 tsp turmeric

1 teaspoon rice syrup (or agave syrup)

Baking paper for one tray

 

Manufacture

Slit the vanilla pod lengthwise and scrape out the seeds.

Wash the lemon in hot water, dry and grate a thin layer of zest.

Thoroughly mix the flour with the baking powder, vanilla pulp and grated lemon zest.

Whisk the sunflower oil with the rice syrup in a large mixing bowl.

Add the flour mixture and knead everything into a smooth, soft dough. Wrap the dough in cling film and leave to rest in the fridge for at least 1 hour.

Line a baking tray with baking paper and preheat the oven to around 170°C.

Roll out the dough in portions on a lightly floured work surface to a thickness of about 4 mm and cut out shapes of your choice.

Place the margarine in a small bowl and mix well with the turmeric and rice syrup.

Place the cookie cutters on the baking tray, brush with the margarine mixture and bake on the middle shelf of the oven for about 10 minutes until golden brown. Carefully remove the baked cookies from the tray and leave to cool on a wire rack.

Easily “veganize” traditional Weinachtsgutzli recipes.

Here are a few tips:

  • Egg yolk: 1 egg can be replaced by 2 tablespoons of ground linseed or psyllium mixed with 3 tablespoons of water. A great egg substitute powder can be made from corn starch and lupin flour, almond puree mixed with water or starch or soy flour mixed with water. Bananas can also be used for binding.
  • Protein: We recommend applesauce or freshly grated apples for the airiness of a pastry, or why not experiment with aquafaba? You can find everything about aquafaba
    here.
  • Butter: rapeseed oil or rapeseed margarine (palm oil-free).
  • Gelatine: Its simple; Agar-Agar.
  • Honey: agave syrup, maple syrup, pear syrup, apple syrup, coconut blossom sugar, dried fruit, raw cane sugar (panela/ muscovado), stevia or birch sugar.
  • Milk: coconut, oat, spelt-hazelnut, quinoa, amaranth, almond, rice or millet milk.

Tattoos for Charity @ The Vegan Market

At the first Vegan Market in Zurich at the EWZ, I am venturing into a charity project: Tattoo for Charity is intended to support people and animals at Christmas time: Half of the profits from every tattoo engraved at The Vegan Market Zurich (2-4Dec 2016) will go to the Swiss Refugee Aid and the other half to the Lebenshof project With this charity project I want to the vegan way of life: I put humans and animals on the same level.
