Beyond Meat.

Last week, Lauren Wildbolz had the wonderful opportunity to host catering for 70 guests during the Swiss launch of Honest Iced Tea. Her highlight was getting to know the visionary Seth Goldman. He gave her the fantastic news that his company Beyond Meat* was already supplying the first restaurants in Switzerland with Beyond Meat burger patties in July. will supply.

The company Beyond Meat has succeeded in cracking the molecular composition of meat. Beyond Meat offers chicken, beef and, most recently, a burger made from pea protein, beetroot juice, chia seeds and other plant-based ingredients.

Vegan start-up companies are springing up, financed by Bill Gates, Google founder Sergej Brin and financial investor Peter Thiel. These are companies that want to revolutionize the meat market. One of the flagship investments: Beyond Meat. The founders want the meat to be followed by something that looks and tastes like meat – but comes from vegan production rather than from animals.

The Californian start-up wants to replace animal protein with plant-based protein for the masses. For human health, positive impact on climate change, natural resources and respect for animal welfare.

Their approach is based on the 25/20 principle: The Beyond Meat company aims to reduce global meat consumption by 25 percent by 2020.

Ihr Wissen und ihr Engagement für das Thema vegane Ernährung sind wegweisend für den Umgang mit Lebensmitteln aus naturnahem, umweltschonendem Anbau und Gebrauch – und regten zum Nachdenken an. Lis Mijnssen gab Einblicke in die Praxis und Erfahrung ihrer gelebten Philosophie – ökologisch, biologisch, vegan und bewusst gegenüber Mensch und Umwelt.
Zum anschliessenden Diskurs geniessten die Gäste ein reichhaltiges veganes Nomadenfrühstück und lernten die beiden Exponentinnen persönlich kennen.

 

Strawberry slice as a children’s dinner

Recipe

Ingredients
500 g organic strawberries
4 tbsp raw sugar
300 g wholegrain rusks
50 g vegetable margarine or coconut fat

Preparation

Slice the strawberries and cut them into four more pieces. Place all the sliced strawberries in a large bowl. Add the raw rusks and leave to stand for half an hour (refrigerate). fry the rusks in a frying pan with a little margarine or coconut oil until golden brown on both sides. Serve the rusks warm and garnish with the strawberries. tip: Make sure the rusks are wholemeal and do not contain butter or whey powder.

Fortunately, many wines are already produced using organic or even biodynamic methods. Some examples are also vegan, as an example from the canton of Zurich shows. We are talking about Lunaris 2012 from Staatskellerei Zürich, which belongs to the Mövenpick Group. The red wine is made from the fungus-resistant Cabernet Jura and Monarch varieties. The use of sprays can thus be kept to a minimum. Chemicals are prohibited in organic viticulture. The fruity, fresh Lunaris has an intense, spicy bouquet, is dense on the palate, with soft tannins and ends with a beautiful length. A wine may be called vegan if the producer does not use any animal products such as protein or gelatine for the fining and clarification of the wine. Alternatives include bentonite (natural mineral clay) or vegetable gelatine. The term “vegan” is not defined in wine law. Certain winegrowers declare their products. Otherwise the consumer must ask the retailer or producer whether the wine is vegan or not.

Consumers are deceived by the discrepancy between appearance and reality. This prevents an informed choice at the meat counter. This is not the case with a realistic depiction of the husbandry conditions. Only then can consumers make an informed decision.

Ital or I-tal (/ˈaɪtɑːl/ eye-tahl) is food often celebrated by those in the Rastafari movement. It is compulsory in the Nyabinghi mansion though not in the Twelve Tribes of Israel or Remi mansions. The word derives from the English word “vital”, with the initial syllable replaced by i.[1]This is done to many words in the Rastafari vocabulary to signify the unity of the speaker with all of nature. Rastafari derive their beliefs and morality from intense personal meditations and prayer, and therefore there is no single dogma of Rastafari belief.[2] Due to this emphasis on individual personal meditation in Rastafari, the expression of Ital eating varies widely from Rasta to Rasta, and there are few universal “rules” of Ital living.

The primary goal of adhering to an Ital diet is to increase Livity, or the life energy that Rastafari generally believe lives within all human beings, as conferred from the Almighty.[3] A common tenet of Rastafari beliefs is the sharing of a central Livity among living things, and what is put into one’s body should enhance Livity rather than reduce it. Though there are different interpretations of ital regarding specific foods, the general principle is that food should be natural, or pure, and from the earth; Rastafari therefore often avoid food which is chemically modified or contains artificial additives (e.g., colour, flavourings, and preservatives). Some also avoid added salt in foods, especially salt with the artificial addition of iodine, while pure sea or kosher salt is eaten by some. In strict interpretations, foods that have been produced using chemicals such as pesticides and fertilizer are not considered ital.[4] Early adherents adopted their dietary laws based on their interpretation of several books of the Bible, including the Book of Genesis (“Then God said, “I give you every Seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.” (Genesis 1:29)), the books of Leviticus and Deuteronomy. Along with growing dreadlocks and the sacramental smoking of ganja, observing a vegetarian diet is one of the practices early Rastafari adopted from Indian Hindu indentured servants living in Jamaica. Rastafari’s unofficial founder Leonard Howell, affectionately called “Gong” and “Gyangunguru Maragh,” though not of Indian descent, was fascinated with Hindu practices and was instrumental in promoting a plant-based diet in the Rastafari community of Pinnacle.
